Swagelok Pressure Gauge - Refinements for line in Pre Infusion

I have gotten quite a few inquiries regarding
Espresso Cart - Goodbye Plumbed In
I was hoping that some of the engineering types could help me identify some possible parts for those that want adjustable line in preinfusion.
Seems to me that you want to get the highest pressure pump, maybe 70psi, 4.8 bar, and then an super good pressure regulator like a Swagelok. They have so many models. What would be appropriate?
One would need to be able to screw in a 1/4 John Guest connector, but what about the correct pressure range, gauge, and anything else.
Are there other high end pressure gauges for easily adjusting line in pre infusion.
