Why run boiler so high that you have to do long cooling flushes? No flames, please - just wondering if I'm missing something... (Currently running boiler at 201 and brewhead at 197)

It's different with heat exchanger machines; there's lots of articles explaining the principles on this site.

Ahhh - thanks. This would be not necessary with a 2 boiler machine, yes? Or single boiler and separate steamer?

Yes * 2. The three prominent designs (single boiler, heat exchanger, dual boiler) are introduced in Espresso Machines 101.
