OK. A little bit confused here. If I have a single shot basket, say 7-9 grams. At 1:2 ratio you have a 14-18 gram/ml shot. However a single shot is suppose to be 30 ml/grams. Same thing with a double shot. What is correct?

Nominally, a single is 7 grams and a double 14 grams of coffee. Of course, this is only a starting point. When dialing in the grinder and tasting, such "standards" go out the window along with other standards such as brew ratio, temperature and so on. So, a single at 2:1 is 14 grams out A double at 2:1 is 28 grams out. But this is only nominally.

Both. The traditional 30ml/14g-18g numbers include crema. (14ml-18ml is wrong.)
