I don't think it really matters where you count from -- I look at the sweep second hand when I pull the handle on the E61 -- it's about 8 sec till first drop and I aim for about 35 sec from 1st drop or 43 sec from handle pull. Some beans like a little longer shot than that. But it's really finding a recipe - dose, output, temp, and time for a given bean and machine that you like. YMMV!
