Thanks Daniel for the update. This thread started in late November. Four weeks to go from "I still cannot get a good espresso with crema... it comes out watery and bitter" to the results you report now is about right. Eliminating variables like temperature control surely helped, but I'll bet your improved technique was among the largest contributors to better espresso. :D
