Whats the best way to go about making one macchiato at a time? It seems like it would be challenging to achieve good milk texture without wasting a bunch. Any tips for steaming a very small volume of milk? Should I be using a spoon at some point?

Almost scared to say it, as it is blaspehmy, but an electric frother works quite well for small quantities.

I can do okay down to say 4oz of milk, but I'm really having trouble with the 1-2oz needed for a macchiato. I haven't seen any direct suggestions for steaming such a small amount of milk, is it really just practice or is there a hard limit?

I find there is a practical lower limit for good microfoam, which differs from machine to machine depending on steam power. Under 4oz milk is dicey on my Spaz S1V1, a powerful steamer. The good news: milk is cheap. Generic supermarket milk runs ~$3/gallon (actually $2.50/gal at Safeway), so 4oz milk costs less than 10 cents. I don't like waste, but dumping 2oz milk ain't gonna break the bank.

My cat is in charge of leftover frothed milk disposal. :)

Check out this thread: No milk waste home macchiato

Sorry I can't give my own advice but I don't normally take milk in my coffee.

I, too, try to minimize waste, and I make macchiatos frequently. I find that 3 oz is the lower limit for getting microfoam. Below that, and you just don't have enough volume to make it work. Milk isn't too expensive, and I don't mind wasting a sip when I do make a macchiato. I just use an 8 oz pitcher with oz hashmarks, fill it up to three and go. It's just the price of a macchiato.

I have a Spoline knife steam tip (from EPNW) on my Slayer and I steam 2 oz whole milk most mornings without difficulty. I use a 4 oz steaming pitcher. .
