Another reason for a worsening extraction: aging beans. I say this because at the turn of the month I received 5 lbs of the most exquisite espresso beans, which I carefully preserved in 16-oz. canning jars in the freezer. At first almost every shot was delicious, and the beans were very forgiving. Now, even though the jars still smell very fresh when removed from the freezer, my shots are all coming out bitter regardless of adjustment.
