You're doing much better now. I agree with the above posts that its time to concentrate on prep and timing. Beans might not be at their optimal post roast. I personally would be looking to a darker roast but that might just be personal preference.
You just need a bit more fine tuning.

"You didn't buy an Espresso Machine - You bought a Chemistry Set!"
Hi everyone,
I tried a couple of other baskets, and finally ordered a VST 18g. Here's the early results:
I also just bought some more coffee that was roasted 1/31 so I will try that tomorrow.
I had to dial in this basket - first pull was way too fine, 3rd was the one above ~2:1 shot in 36 seconds.
I did some more research and ditched the distributor. Bought a higher collar so I can WDT more aggressively. I spend a good amount of time on it, but still perplexed by areas where I see gaps in extraction. Maybe that's due to coffee not being super fresh?
As always, I welcome any thoughts!

You seem to be improving and a different fresher coffee bean might reveal some new info.
There's another accessory that might help as well, an IMS E61 200 IM Shower Screen. Watch the video on the attached link to see if you think this might help you. I think it will.

Wow, how did I not know about these?!
Is nano detrimental on these like on baskets?

I don't think the nano tech coating is detrimental, I just don't think it's essential or necessary. We've been using the regular IMS E61 200 IM screen for years and highly recommend it.

The main thing about the Nanotech baskets is that for any given coffee beans you must grind them finer to get the same extraction you'd get with a non-Nanotech basket of the same size. I've tried them and IMHO the only real benefit over non-coated baskets is the easier cleanup.
I purchased the new shower screen (E61 200 IM), but not seeing results akin to the Clive Coffee video (https://www.chriscoffee.com/products/e6 ... wer-screen). Do I need to adjust pressure / flow on my Profitec Pro 600?
Here's the latest pull with new coffee (Black and White The Natural medium dark roast, roasted 1/31):
Thoughts?

Well you're still improving. Perhaps you can verify and adjust your pump pressure while pulling a shot under load. Keep working on the variables you can control, dose and grind.
How's it tasting?
