There are a gazillion threads about roasting on an SR800 WITH an OEM or Razzo extension tube...is anyone using the SR800 stock, or is it only possible to get evenly roasted beans with a modified roaster?

I had an SR500 and a 700. I made an extension out of some glass tubing. I didn't notice any difference in evenness of roast, but I was able to roast a bit larger volume with the tube. I suspect the 800 would work about the same.
