Probe Rant
Sure lots of places to buy. But not so many places have what seems to be what people really need which is a decent quality RTD for $40 IN THE RIGHT SIZE (CAPS MEANS RANT)
ADAPTERS
Anyone find an M8 x 1.25 probe adapter for a 3.2MM probe (actually 3.175mm). Well that seems to be the standard size for most home roasters - Huky, smaller MCRs and Buckeyes. Phidgets sells an M12 adapter but no M8. Auber sells an M8 x 1 for 3.2MM and that's the closest I have found. M8 x 1.25 probe adapter - I can't find any. There are some for 3mm probes on AliExpress. So back and forth we go mixing metric roasters with imperial probe availability.
PROBE LENGTH
Oh and length, why isn't 3" more available. 4" is too long for most smaller roasters. What happens if your probes are too long. Your roaster looks like My Favorite Martian with his head tilted at you.
Thats what my roaster looks like now cause I gave up looking and just went with the Phidges 11cm ones. I broke one of my other ones. Hence the opportunity to RANT at the process.
And to finish with a happy note, other than the length, I am quite happy with the Phidget RTD build quality. Much improved over what I had.

I can drill a hole in a bolt if you want. On FrankenBehmor all I did to locate the probe was figure out where I wanted it to stay and then bent it gently so the bend was in the bolt and that held it in place fine. At that point you could also use a center punch on the bolt to lock it in place.

You can use a combination of a 1/8" pipe-to-1/8 MNPT fitting, together with a FNPT-to-M8(1.25) adapter. It will also reduce your probe length - an added bonus! Though the fitting will stick out a bit more.

Basically what I have now. Not clear that the thread pitch on the two is the same. I don't think mine was the same. The metric adapters seem to use a wider thread pitch. In any event it still makes for long extrusion compared to what a proper fitting would be, and even with that a 3" probe would be much better than a four but hard to find. Best I know.

Hmmm. Hold that thought.

Just get a lock nut for 3mm and use a 3mm dril on a cordless drive to 'ream' the hole and olive...I ran out of patience searching for the right locknut and did that, works like a charm.

But that doesn't solve the 3 vs 4 inch issue.
All I want is a 2mm RTD....and then I will be happy

Actually Artisan is not in favor of 2MM. Too much noise. 3 or 3.175 (1/8) is recommended.

Hence the rant about the mix and match. Would love to see proper fittings available for people. At least where you are at 3mm probes to fit into a metric adapter can likely be found. Don't know about the length issue though.

did you check TC Direct?
I had a custom 2mm TC made and whatever locknut length etc was no issue whatsoever, I can imagine they can do the same for an RTD.
the TC was not THAT expensive, I recall something in the order of 60-70 euro.
