So my second roast of this coffee, I tried to shorten the time post FCs. I had the same FCs time in both roasts. In the first one I dropped after 2 min at 395F and the one I will try tomorrow will be 1:45 and 388.2. The coffee smells amazing. We are only 6 days post roast this time. Can't wait to try it tomorrow.

I just placed my order for six pounds of the 2020 PEN. I am still roasting the 2019 PEN, and it is consistently great coffee.

I just roasted the first of my 10lb yesterday and have to say, this is far and away one of my most favorite coffees...top 3 for sure. And that's going by a day-after pull that wasn't exactly optimal. It's forgiving to both roast and pull (and other methods), remarkably delicious/complex/clean, reasonably-priced (through Klatch), etc.

I'm really impressed and am struggling not to order more now that I can vac-seal and freeze. I just have such a stockpile already...

I think I preferred the darker version of my two roasts, but we really need to try again tomorrow. The @hooliganbengals got under my wife's feet and her coffee went flying. They weren't sure about the cappuccino ala floor but at least they tried it.

We will taste properly in the am and report back.

Mike, have you compared something like this roast to 2min post FCs? Remember mine are espresso, and yours usually not, so you may like this better.

I have. Theres a few roasts in the 2019 Panama tread where I went longer. As these darker roasted coffee's age I seem to like them less & less.

Ok enjoying the second batch, but prefered the first with the 2 min development time. Dropping at 395. Here is the graph again if anyone wants to see the phases. And as a frame of reference in Analyzer this roast has an MSE BT of .05. So even though your roasts might look a bit wavy they may be great.
