I find this happens a lot with my light and medium-light roasts. Flavors are pretty muted for at least five days, and usually it's 10 days before they start to really open up. More often than not, they get better after that, sometimes for a good two weeks or more before leveling out or declining. This may a feature of DP or African coffees, or both, but since African naturals are all I've been roasting for quite a while I can't say for sure.

That said, I've had some African DP roasts that tasted pretty good at five days but got funky and astringent at 10 days. In one case that was a problem with the roast, but in other cases I think it was the bean.

I roasted a batch of the Kenya Nyeri Ichuga factory mentioned a few pages back, on 7/8. I tried it after 3 days and was not so impressed. At that point the tartness was kind of unpleasantly astringent, the fruit/wine was maybe "grassy," and there was an ashy flavor I figured was a roasting flaw. Today, 11 days after roast, those flaws are all gone, I can taste the winey fruit. I can't taste the ashy flavor I noticed a week ago. It's clear and bright in a very good way. With this one resting really makes a huge difference.

That's good feedback. I have been trying to let my first roast rest to see how it changes. Would it be possible to move this over to the thread specific to this green? Sweet Maria's Kenya Nyeri Ichuga Factory

It looks like the washed Ethiopians are coming out now. I suspect the natural processed should follow shortly. I'm checking SM regularly for them.

Flavors on this were "Lemon-lime, apricot, black cherry". Today I definitely got the apricot when it cooled to just above body temp. I was fairly blown away. I'm going to have to check my profile notes! Did you manage to pull any of these flavors?

I have loved this coffee. SO Espresso. Definitely the lemon lime and apricot. Just did another batch and will search for the cherry.
