The Probe through the handle - which essentially gives one a good understanding of drum temp was an idea I implemented based on a similar probe position when I owned a Quest M3. I found it important to keep MET below a certain level particularly towards the end of a roast.

Traditional ET probe can be achieved by bending a probe up through the chute screw.
