I might be asking to much here... Is there anyone who would be interested in sharing a .alog file specific to Ethiopian natural coffee? I would like to compare it to what I am coming up with, if possible? It does not have to be specific to your liking, my thinking is that just seeing an Artisan file would be extremely helpful to see if I am on track!

You're on an Artisan 3e - air fluid bed roaster and most here are on gas drum roasters. You might have more luck in a FB group for your roaster. I personally believe that temp after FCs and development time are the critical factors for bringing out the fruity flavors you may be seeking (you didn't say). % is not relevant if you know your coffee isn't underdeveloped.
