yeah boiling water is more for when the temp is off...I'm thinking the roaster may have PID temp control, not sure what type of roaster so a picture/description helps but indeed it all starts with reading the Artisan manual.

If not you should be able to take one temperature probe out of the roaster and put it in boiling water to check various artisan settings to find what is going wrong.

So it's a drum roaster, is it electrically heated? Can you tell us how you manage heat, do you set one and the same temperature using the PID controller?
