Losing water in plumbed in espresso machine.

Hi,
I have plumbed in my large espresso machine to a portable water tank (20 litre). The espresso machine definitely is refilling from the portable tank as the water level in the external tank drops noticeably with use. Unfortunately though the water tank in the actual machine (internal tank) drops slowly with use. This means that once a fortnight I have to manually siphon water into the espresso machines internal tank.
Also I have attached photos of a knob next to the on/ off switch, I'm not sure what it does?
