That's a great question! We typically refer people to this article, page 7 under the section "TIMING THE ANALYSIS":

This article does a great job describing post-process analysis versus finished product analysis, in which they recommend that commercial roasters take measurements immediately upon cooling completely, as well as 48 hours later to have two QC points.

As long as you're consistent with your timing and understand this effect, any time post roast will be accurate, so long as you're aware of any potential changes that can still occur over time before consuming the coffee yourself or selling to others.
