Typically when I dial in a coffee, I start coarse and then push finer until the coffee starts to taste astringent. Please give that a go and let me know how it works out.

Thanks, Nick. I gave this a try with the Mexico from Small Planes and got a drawdown right around 4:00. It's not perfect, but I think we're moving in the right direction; less of that "off" taste I've been getting (whether it's sour or bitter) and more balance. I'll try going finer and see what happens.

Update: Did 25g/375ml with Verve Nueva Montana Natural on 6 and got a really nice cup with a 3:00 drawdown. Starting to crack the code, I think.

My seasoning beans arrived today. I'll take it slow and steady as you advised, but do you have any advice on what grind setting I should use for seasoning?

When I season a grinder I usually go on the finer end. For Ode Gen 2, I'd suggest a 3.

Also, just to explain what's happening, at coarser settings you're probably getting a combination of underextraction and overextraction at similar draw down times. As you go finer on the dial, particle distribution gets much better, and the extraction is more even. With the Gen 2 burrs the main piece of feedback I was trying to tackle was "the burrs don't grind fine enough", so they were designed in a way to have their sweet spot a bit lower on the dial than some other designs. Hope your cups improve over time and you enjoy.

Thanks, Nick. I'm definitely getting somewhere with the bigger brews; 6.2 seems to be right at or very close to the sweet spot for a couple of coffees I have from Tandem.

I'm still struggling a bit to dial in for my smaller brews, though. How much (if any) adjustment do you recommend for different size brews?

The smaller the brew, the finer you'll need to grind in order to match extraction levels. If you're at 6.2 for a larger batch, I would try going down to 5 for a smaller one and take it from there. Keep going finer until the coffee starts to have a lasting, dry astringency in the cup instead of a lingering sweetness.

Just wanted to pop in say that I think the Drops program is solid. I've tried a handful of coffees, and many more hits than misses compared to other "subscription" programs (Drops allows you to opt in each week, which is another awesome benefit).

The Rwanda from a couple of weeks ago was phenomenal.
