To say a bit more on that, Ray convinced me that his idea for a totally-different way to control the pumps, was exciting and worth the effort. It, however, means a totally different (designed from scratch) AC control board and from-scratch firmware to do the job. Ray has proven, in simulation, his ideas, and now it's time to try them with real hardware. The PCBs arrived a day ago, and are being brought up now.

As this new pump control approach is proper R&D (no machine that we know of, has implemented this idea), we can't be 100% sure of the time-to-completion.

Just a teaser, the new pump control boards (can't say anything more about them at the moment)

New video: Decent milk thermometer

Too-hot milk is a really common way to ruin a drink.

Milk sugars start to change around 70ºC and won't come back to being sweet again, even after the milk cools, making for a sour beverage.

Most people use the 50ºC "threshold of pain" (plus a few seconds) to guess the milk temperature, though how well this works really depends on the thickness of your milk jug.

McCafe ad, accidentally defines "fast food" vs "slow food"

I spent 2h talking with Maxwell at his new cafe in London today https://www.doubleskinnymacchiato.com/2 ... ondon.html and buying his new book on the business of specialty coffee. https://www.instagram.com/p/CyvqsOBMwZj/

In our conversation, Maxwell mentioned this McDonald's TV ad from the UK, how it mocks specialty coffee, but also how all cafes have this similar look:
It's a really well done ad, quite funny. But actually quite good for speciality too, as it does separate "fast food" from "slow food" movements.

For example, with slow food, it's served by people with an identity (bottom left photo) vs those with no identity (bottom right). Ceramic vs paper cups.

My feeling is that those of us who like specialty cafes can laugh along with some of the ridiculousness of it all, but also be totally repulsed by the McDonald's "solution" and despite its absurdities, want to continue to be associated with the specialty cafe.

Regarding milk thermometers, a frothing cup with the thermocouple built into the side would be nice. Fully enclosed and waterproof, with probe resting against the cup perhaps a couple centimeters up from the bottom. It should be calibrated to report likely actual temperature.

That temperature should be displayed on the Decent steaming screen, with an optional cutoff temperature, at which point it tapers down to the standard slow wand purging flow.

I suppose a sealed cover over the USB-C recharge port would be one option, or perhaps wireless recharging via a new charging section on the right hand side of the drip tray.

We thought about it some time ago, and decided not to, ask milk jugs get battered and have to be extremely resistant to water and constant thermal cycling.

Basically, what you want is like an "ember mug" (it has a thermocouple in it) but shaped to pour.

Next year, we're going to have support for the MEATER thermometers. They can take a beating.

Video: how to remove a gasket

Here's a short video demonstrating how to remove a gasket.

We're using the gasket tool we sell, which is a dental tool with two different ends on it. We have this thing made for us, as I've found most other tools are either too large to get into the tight space, or not strong enough.

And, we've moved completely over to silicone gaskets. These are our own make as well, colored light grey so that you can easily see coffee grounds on them, that need cleaning.

Amazing eggnog -- with your espresso machine!

Eggnog can be tricky to make, easily overcooked and clotted, or dangerously undercooked (raw eggs!). The steam wand on your espresso machine, along with a milk thermometer, is all you need to easily make amazing eggnog.

TLDR RECIPE:

1) In a blender, put:
- 1 large egg
- 150ml whole milk
- 80ml salted caramel http://www.youtube.com/watch?v=yh0qmzRCKUE

2) Steam to 80ºC
3) Serve 50ml
4) Boozy variation: +5ml spiced rum
5) Espresso variation: +25ml espresso
6) Boozy Espresso variation: 8ml Amaretto

Full recipe:

Espresso Machine Eggnog:

In a blender, put:
- 1 large egg
- 150ml whole milk
- 80ml salted caramel
- (optional) powdered cinammon

steam heat the mix to 80ºC
- (optional: briefly blend after heating)

serve into a small cup
- I serve about 50ml
- (optional) powder ground cinammon on top of the cup

Boozy variation:
- add 10% of spiced rum (vanilla, oak flavors)
- in a 50ml of eggnog mix, add 5ml of spiced rum

Espresso Eggnog:

- 25ml of espresso (medium or medium dark bean, pulled with "Espresso in the 80s" profile)
- 50ml of eggnog ("no alcohol" version)

Boozy Espresso Eggnog:

- 25ml of espresso
- 50ml of eggnog ("no alcohol" version)
- 8ml of Disaronno (or other Amaretto liquor)

Here's another Decent scale question:

If connected to USB for power, will batteries improve reliability of V1 or V1.1, if the unit has reliability issues?

And if batteries are in the unit connected to USB power, will the batteries drain more slowly compared to an unplugged scale?

The Decent Scale has always worked while plugged in. However, the v1.0 version was very sensitive to input voltage, so people needed to use high quality USB converters (typically, Apple or Samsung or equivalent). v1.1 and v1.2 (current) changed the requirement from being 4.95-5V to be 4.1V-5V, so yeah more reliable. If you have a v1.0 scale that occasionally goes to sleep (on batteries or USB), moving to the newer models will make a big difference.

As to your last question, the batteries aren't drained at all when you are connected to USB power.
