Those chunks are frozen Cascara tea that we brewed the night before. What we try to achieve with all fermentation processes is to enhance flavors that are already present. This particular one enhances flavors that were present inside the cherry.

We're almost out of this process. Switching to the Washed very soon. So you will be able to buy the roasted and green together of the same process.
