More form than function here as the reflection is too small, only enough to see if it starts beading. But too pretty not to share ..

I'm starting to feel comfortable enough with the pressure gauge to toy around with different profiles. Generally, I start the shot by slowly bringing the pressure up to 7 bar, then decline to 6 as the shot progresses.

I'm working on the Londinium profile to start, since I always see it referenced by Decent espresso users. Basically slamming the puck at the start with 3 bars to compress it, holding 3 bar pressure for ~10s, then raising the pressure to 9 or 10 bars before declining linearly until I hit my desired yield. I haven't done enough back-to-back tastings with my control profile to have any real conclusions yet, other than "it tastes different".

Are folks here finding they use a different profile from the "classic" manual lever profile?

I've been using rpavlis water since getting this machine because I was worried about creating scale but if I'm being honest, I never actually tasted the water after I made it until yesterday. It was really flat and had no flavor at all (for water).

I'm thinking of just switching to my water that comes through the brita filter but I want to be sure I won't cause any damage in the long term.

I measured the general hardness of the water coming straight from the tap and it's about 120ppm. Going through the Brita filter brings it down to ~87ppm.

Is this OK if I just descale once every few months or would it still be advised to check out different water recipes?
