You have every freedom with a spring lever. Playing with different pre-infusion and pressure profiles. The profile of the spring is only one option. If you have the gauge you will exactly know what's happening. Of course you don't need the gauge for that freedom. I have found that I get a good temperature reading off the group head near the location you are talking about putting a probe in the water path.

I put temperature conducting grease between the thermocouple and the group head plus thick Teflon between the thermocouple and the clamp. There is a few second lag but it works well enough for my purposes.

Yes, that measures the outside of the group temps, I am trying to measure the actual water running through the Group. Being that this is a cold fed HX there will be a noticeable temp drop when the shot is pulled because new cold water is entering. I have zero idea of how much water the HX holds but it looks like it could be more than just shot water.

That looks like it is going to measure the temperature of the rod and linkage.

That was just a wire. Sensors I use measure at the tip.

That is a real engineering feat to get that wire around those corners.
