Profitec Pro 800 Tips

Replaced my Profitec Pro 500 with the Pro 800 and I'm having difficulty getting the crema output I had with the older machine. I'm using the same kind of freshly (home-roasted) ground coffee, 30 lb tamping pressure, and I've fiddled with both coffee amount/volume. Any suggestions?

So you're using the same baskets? Are you brewing at the same temperature?

When I first got mine I had a few shots that weren't crema Karen like my old pump machine. Keep playing around with dose size and grind and you will get there.
I use the stock double basket and dose 18.5 grams which Tampa below the ridge. I've also found just using the kafatek distribution tool and no tamp at all gives me the best results.
It is a different beast than a pump machine, but once you get the hang of it the pro 800 is very rewarding.

Using the OEM 21 gram basket, I dose 18 gram in and 27 gram out. With darker Italian roast, I get a lot of thick crema. With light roast, I get thin crema. Temp set to 248F
