The machine in our roastery is a bit older than yours. A small investment for better temperature management is a temp strip for the group. I think you can purchase it at Orphan in the U.S.. You will like this beast :-). I set the pid slightly lower at 116 Grade Celsius (241F).

I have been using a Pro 800 since June last year, initially I tried various temperature settings but eventually settled on 120C / 248F

machine isn't here yet.....I've already ordered the strip from OE, seals , gasket, and shower screen from cafelat. I was thinking of going to joystick steam and water wands, but I think I might like these better. We'll see.

Regarding the Temp Strips -- are they stickers with adhesive?

I've been using this one for 2 months and absolutely love it! Once I dialed in the grinder every pull has been thick, dark and chocolaty. I was skeptical about selling my Rocket however now I'm so very happy I did. I have it set to 120 and PI for only 3 seconds. Seems to work best for my dark roast.

The temp strips would give you a decent idea of what sort of offset there is between boiler PID and the Group exterior. Once you have figured out the offset, for the various temps of your kitchen, then remove the strip and just refer to the chart you made when changing the PID and observing the Group temps. Works fine and something I did when I had other PID machines.

And yes, the sticky thing comes off :-)

You mean it will help you with the offset between real world temperature and the sticker?

If you want measurements use a thermocouple, if you want an indication use those stickers.

No, a Scace or Scace like device will help you get real temperatures. What the exterior of the Lever Group reads and what the boiler reads will all be different than what the water temps in the puck actually are.
