I saw this on the Londinium forum, I'm assuming this just measures the preinfusion pressure? (In the case of the Londinium R, the pressure at which the pressure switch shuts off the pump and subsequently the pressure that the water in the HX is "held" at)

Since you are hitting just under 10 bar I'm guessing that you didn't remove the inner spring.

Yes, this is the the profile of the two-spring version. I'll roast in the next two days. On Thursday I'll make the single spring version.
