Is the water valve on your machine? Or is this a pressure regulator on the water line leading to your machine that you adjusted in yours video.

Yes. Same group.
By adjusting the valve in a matter of a second I can go for a 9 bar shot or a 6 bar shot and every pressure in between. No need to take a spring out.
Low pressure shot.
Higher pressure shot.
Old coffee being used for demonstration purposes of course i.e. flow too fast.

espressotime,

It sounds like your Pompei fills after every lever pull. Is this something you were able to adjust by raising the low side fill sensor? Or did it come from the factory like that?

My Alex Leva fills after every 4 pulls or so and causes a big enough dip in boiler temp that it prevents me from steaming effectively and needs a few minutes to recover. Not sure if it operates the same as a Pompei though.

Is that silver mesh ring on the gold knob under the cup warming rack supposed to come off or stay on?

It's a diffuser for the steam cup tray warmer. It stays on.
