Can you put a pressure gauge on 79 La Pavoni? What are the parts needed?

You'll need a gauge and an adapter. You'll have to measure your machine to see which adapter you need, as one never knows what one has in a (I presume) machine that you bought used.

The gauge goes into the top sightglass bung, where the big slotted screw sits. Good luck with removing that one....

Why would you want a gauge in a pavoni? Are you planning to upgrade to a pressurestat?

Some people here in the forum managed to make 'adjustable' overpressure valves, to adjust the water temperature.
