Hi Everyone,

What is the definitive size for a single shot of espresso in terms of what the industry recognizes?

Every website I do to tells me something different. Some say 1 ounce, 1.5 ounces or 2 ounces.

Also, when making espresso based drinks, what is the proper amount in ounces to use? For example, a conventional latte is 1/3 espresso and 2/3 steamed milk so how many ounces should I use.

Thanks so much for any information.

According to the Istituto Nazionale Espresso Italiano:
What is espresso? wrote:• Necessary portion of ground coffee 7 g ± 0,5
• Exit temperature of water from the unit 88°C ± 2°C
• Temperature of the drink in the cup 67°C ± 3°C
• Entry water pressure 9 bar ± 1
• Percolation time 25 seconds ± 2,5 seconds
• Viscosity at 45°C > 1,5 mPa s
• Total fat > 2 mg/ml
• Caffeine < 100 mg/cup
• Millilitres in the cup (including foam) 25 ml ± 2,5
According to Andy's Brewing ratios for espresso beverages:

I accept either definition as valid, though I prefer Andy's definitions based on brewing ratios because they're more easily comparable.

For milk drinks, I favor the SCAA's flexible definition that "The taste balance should be a harmonious blend of the sweetness of the milk and the espresso as a building block" rather than insisting on rigid measurements.
