Outgassing & LWW bean cellars

I am trying to simplify my workflow by having my bean cellars service both my pour-over and espresso routines. I currently roast 100g batches on my quest and store the resulting 88-89g in three tubes, usually with a few grams of waste as they won't fit. This puts each tube at around 28g. I want to drop my tubes down to 22g and split my roasts into four tubes.
The question: will 78% filled tubes produce enough CO2 to push out oxygen to prevent staling, or will I need a greater volume of beans inside to assist in this process?

I'm about buying the Bean Cellar Comercial pack and use it with 18-24g and I also wondered if the one-way valve will work fine.
When filling full capacity, do you notice the benefits vs. vacuum/regular capping?
I currently use lab tubes with cork and try to figure if I will feel any difference in the freshness and flavours.

was this with bean cellar and was it stored to close to full capacity amount of beans it?
I wonder if it would make a difference, if i only filled with 18g of beans.

I guess you have to store the tubes upright so the O2 will be pushed out properly?

For those wondering, I have 36 tubes. I purchased all three sets at different times several months apart, I believe in the product.

Wonder if insert plastic part (or any food grade part that can fit in) to raise the bean will produce more pressure eventually or it doesn't matter and only 30~ bean will produce the Co2 needed for push.
I guess it is the same valve from the glass version which can filled with 16-24...

I understand depending on bean roast the amount each can hold will vary, so they needed to have them a bit larger then their max intended dose But it seems the commercial holding 24 - 30g, preferably would have been made a bit smaller... If the majority of people seem to dose 18 to 20g. Size range might have been better at 16g - 24g. Offering a much better fit for people dosing 16g - 20g.

It's highly unlikely you'll get gas settling - it's more likely that the gases will mix and you'll gradually dilute the air with outgassing from the beans, if they are stored soon after roasting. The coffee will absorb oxygen and there is constant mixing of gases via temperature and other forms of movement - such as even from the outgasing from the beans themselves, that would prevent stratification.Headala wrote:I guess you have to store the tubes upright so the O2 will be pushed out properly?
