For what it's worth, whenever I've had lab work that required fasting, they explicitly requested that I eat nothing and only drink water 8+ hours before the blood is drawn. They ask when I arrive, "Did you eat anything or drink anything other than water?" Just to be sure that test results aren't invalid, I don't eat after 7pm, don't drink anything but water, and arrive at 7:30am when the lab opens. I'm out in 10 minutes and back home for breakfast/espresso before 8am.
