Delayed information is in no way helpful & this is a baseless statement.

Please help the clearly uneducated understand why reacting to incorrect information is better than reacting to delayed information?

You are making some false assumptions:

- smaller probes provide incorrect information
- laggy feedback from thicker helps you make better roast adjustments
- that you need some sort of apprenticeship before graduating to probes that provide real time feedback

I am running everything through a Phidget 1048.
Tyler, what are the specs of this TC you ordered (price, length/diameter, etc.)? Also, contact info for Molly/Quest?

I didn't get specs from Molly, just a picture. But based on the picture (and basing off my current TCs), I believe the probe length is 50mm, diameter appears to be 2/3mm, and it is terminated with a connector.

Molly's email is questroaster@gmail.com. If you order from her/Quest, it will ship from Taiwan, so be prepared for longer ship times relative to ordering something domestically.

I think coffee shrub also has probes, looks like they are out of stock though...

Thanks everyone for the feedback. Looks like over time, I can upgrade to 2/3mm probes.

Curious why Molly is saying you need an analogue thermometer? With the 3 thermocouples, you remove the analogue thermometer and do not use it.

Molly might have included the analogue thermometer price because I just asked for thermocouple prices.
