Hello
I'm thinking about purchasing the new Kaldi Wide but I'm not sure if I should opt for the additional chaff collector/cooler. Currently I'm roasting on a Kaldi Home on my own stovetop, however my exhaust hood can't handle the smoke well enough.
I believe the Kaldi Wide comes with an exhaust hose which I should be able to through the window. My question is if anyone has experience with a setup like this and can tell me if it's worth to opt for the cooler/chaff collector for smoke reduction purposes.

Yes, you can use it without fan exhaust system. The video linked below does it. Make sure your room is well ventilated or you can use a duct to route it outside.
For the price I paid, I'm really liking my New Kaldi Wide roaster especially compared to Behmor roaster.
