Kaldi New Wide and Fan/chaff Collector On Order

I'm surprised by how little Info I find on this New Wide. I was originally gonna buy a Used M3 but the seller must have backed out cause I haven't heard from her in 6 days and she isn't responding to messages. So on impulse (half out of frustration lol) I ordered the Kaldi New Wide and fan/chaff collector with Center 306. Which all together works out to about the same price as a quest M3. THE Kaldi needs a burner but the Quest needs thermocouples, fidgets, Wires etc.

This will be my first Roaster

My questions are burner and BTUs? 10000-12000 BTU sufficient for 350g batches? I think realistic max batch size is more like 300g but not 100%.

Propane vs Butane? Dual gas seems pricier so I'll just by the better type which I assume is Propane?

Gas Regulator? Are they all created equal? Is their something specific I should know about this? Psi maybe?

Limited knowledge for me as far as above goes. Anything else I'm not thinking of to get my roasting up and running?

Anyone have personal experience with Kaldi New Wide? Or strong Opinions I guess lol? Perhaps Kaldi Gas vs M3 electric roaster opinions that will make me feel better or worse about my purchase? Lol

I got a Gas One 15K dual fuel burner from amazon pretty cheap. Dual fuel is butane/lp gas. I use LP from a 20lb tank.

The other 3K btu makes a difference.

Be safe, don't keep an LP tank indoors. I use quick disconnects and a 20foot hose to keep it outside while roasting using a 20 gallon tank.

Ok I'll look for 15000 btu. Having a hard time finding very low pressure gauge (6kpa) actually. Amazon.ca only has from third party sellers from China so like a month before delivery.

This is how I have my Kaldi Fortis setup.

For the chaffe collector I went with the Kaldi unit, as I wanted to get started roasting and did not want to build something. The one downside IMO, is the poor quality of hose they provide to connect the roaster to the collector. It is foil and will tear very easily.

I purchased a few things and it is much better now.

(#1) attaches to the exhaust port on the roaster, then the new hose (#2) attaches to the elbow. I then use the tape (#3) to build up the O.D. of the tube so it lightly press fits into the lid of the chaff collector.

For the heat source:

I then put the burner in this box with a lid. I cut holes in this to allow air flow and built a frame for the top/

I open the needle valve and the gas valve on the burner all the way. Then, I adjust the regulator to provide my maximum desired pressure. At that point it is very easy to "finely" adjust the heat.

GL with the new roaster, it should be fun. I bought a Fortis solid drum w/ the 301 and chaff collector in 2018. I enjoy it and am still learning.

This article was a fantastic start. I use the same burner in the article. I didn't need the valves and nipples. I connect from the tank using the regulator and hose I already have. I live in the States and the order was from Amazon US. HTH though. The fittings and pressure gage I purchased are;

Thank you Littlenut, you are referencing an article that helped you but I don't see a link. I'd love to read the post, although I have read dozens of posts in the last 4-5 days on the foetus or Wide/new Wide so I have likely read it if it's on HB.

I have a propane place near my house that sells and installs everything propane related (fireplace, appliances etc). I'll go take a look tomorrow see if they sell gauge and regulators directly. Didn't even realize they existed till I needed this stuff. If not I'll try Amazon.com

yeah, that is it.

Actually, I have gone with a longer 36" version of the heater pipe. It is not as nice, but it is longer. It is still much better than the original one.

Here are some pics of my setup. On my firebox I started with a 6" hole on the top plate. Not enough cold air mixing with the hot air, so I opened it up all the way. That is why it looks a little messy. I also added a photo of my cooling box that I made with this fan.
