By design. Buttons, sliders and readings are automatically shown on pressing ON and hidden in offline mode.

By design. If you selected a device depending on a serial or MODBUS port, the serial-port dialog popups up automatically for you to verify the correct port selection.

Well, OK. But it's a bit annoying. The Config->device dialog does way more than just select a device. You configure your serial port once and you're basically done unless you got it wrong. Perhaps if you actually changed which device you have selected in the device dialog it might be logical to pop up the serial port dialog, but if all you did was rename the device label1/2 or maybe swap the ET/BT LCDs or anything else that doesn't actually change which device the PC is talking to it's pretty unexpected. Just an superfluous click to make the unneeded dialog go away.

Just my opinion, of course.

USB virtual COMs are allocated dynamically, and you can't be sure that every day your measuring device is same COM#.
Also, some devices does not have a signature, to be able to identify them programmatically. One example is the device I am using, Mastech MS6514, the system see it as a CP2102 USB to UART Bridge Controller, used by gazillions different devices, like wifi or BT dongles. Also, the Mastech protocol don't include a signature packet, with a device ID or something similar. Plug anything like this in a random order together with a MS6514 into a PC and they will swap the COM numbers randomly.
For this reason the confirmation screen make sense, but I agree is annoying...

Mine is COM6 and I've never seen it change, but I can certainly accept that it's possible. That's why there's a serial port menu button. If my system's serial port number changes I'll go straight to the serial port configuration, not via the device configuration dialog. It seems to me that the most likely workflow is that you select which device you're monitoring once and after that the changes made through the device dialog are not related to how your system communicates with the device. So most of the time the extra serial configuration popup is simply an annoyance.

Just noticed that in 1.2 when I save a graph it makes the area outside the graph and axes dark and nearly illegible. Anyone figured out how to get back to the light edges?

Here's an example: Watched Rao's video and trying to put it into practice.
