A suggestion for everyone who has the EG-1 with the oak platen; you should periodically cover it with mineral oil (as any other wood kitchen item). Helps keep it looking new and prevent stains and wear.

2 - 3 layers of OSMO HARD WAX OIL, a much better solution and lasting forever... :)

I would stick with mineral oil for everything that comes in contact with food. This will last for a few years before you need to reapply it.

Off topic of EG-1 itself (incl. enclosed picture):
OSMO HARD WAX OIL is, quoted "approved for the food industry. Safe for humans, animals and plants / suitable for children's toys (according to German DIN 53160 and DIN EN 71.3) No harmful biocides, no preservatives or aromatic compounds." :D
I use it for years for coffee accessories (and for wooden kitchen spoons as well :wink: ). It is available in gloss, semi-matt and matte versions and creates a nice solid but breathable film that highlights the grain of the wood but still maintains a natural look (unlike varnishes). Believe me or not, hard to find anything better.
