Are you using light roasted coffee? If yes then welcome to the world of light roasts and unimodal burrs. Grinding near chirp and having to dial in very small ranges is normal especially with a flat 9 bar machine. It should get a bit better after around 15kg of seasoning.
Yes, this espresso blend is more towards medium than light but I noticed that dialing in will need to get used to.
I might have found a baseline for the starting point at around .65 grind setting and 6 RPM.
Was confused and worried when I read others were grinding above 1.0.

I've been mostly around 1, but my newest lightest roast I just did is taking a grind around 0.4 to 0.5. Kinda shocking to be this low considering where everything else has been, but the coffee is still delicious so I can't complain.

Also, too fresh coffee can definitely behave this way. I prefer my beans rested at least 3 weeks when doing espresso.
BACKGROUND:
I have a Niche Zero. To this point, I have preferred medium roasted coffees with normal flow rates (not turbo) for a milk beverage with chocolate notes and texture/body. I am purchasing a large flat burr grinder to open myself up to the world of modern espresso shots which (to my understanding) have more clarity and are more fruit/floral-forward than the conical Niche Zero.
I am willing to allow my shots to take a few steps back in texture, however, I don't want to completely sacrifice the body and texture of the shots because I still prefer milk drinks (I want to really enhance the flora/fruity notes in those drinks). I enjoy filter coffee here and there but it's optional for my new grinder to push the envelope of extraction on those for my current drinking preferences.
I've settled on the p64 for the following reasons:
1. Very similar workflow to my current Niche Zero
2. Premium quality build and ease of use
3. The price is within my budget

I want real-world advice on which burrs to get. Based on the Burrs FAQ on their website, I should purchase the Mizen Omni burrs. Lagom can claim whatever they want to market those burrs, so I wanted to ask people here: what has been your experience with those burrs, and should I consider something else?

I think the 64 Mizen burrs are a good compromise between the 64 MPs and HUs. I find them less boring than the Cast v2s, with 98 HUs and Bentwood as my reference points for light-roast coffees.
The market for used 64 mm burrs seems pretty strong, so changing (or even just trying something different) in the future isn't a deadly expensive proposition.

Judging from that comment I think it's probably a good idea to err on the more espresso focused side. I wonder if the 64ES are anything like the DRM/Cimbali Max that share the same kind of channels along the edge. FWIW those are very nice for milk drinks for some reason.docforven wrote:I still prefer milk drinks
On the other hand, if the 64OM are anything like SSP's cast, they would probably work fine at least with dark roasts and milk - just wanted to chime in that perhaps you shouldn't expect light roasts with them to shine through milk. I only have the original P64 burr, 'unimodal v1' (mounted in a Mazzer) and for me those offer more punch when used with very finely ground light roasts..
Keep in mind this is mostly conjecture from my part, happy to be corrected.

If there's a $60-off deal for current owners and you think you want to try a more traditional burr, I'd order with 64 MP or Mizen and get the 64 Mizen ES with that deal.
