Opinions on DF64V DLC burrs-what characteristics do they bring out in coffee

I have used my DF64V grinder exclusively for espresso for a few weeks now.

I have had no issues with it and am impressed with its construction, aesthetics and performance....but I am not convinced about the results of the DLC burrs that come standard with the grinder.

Can any other DF64V users comment on the qualities that you have found that the standard burrs-(DLC)-bring out in the beans that you are putting through the grinder?

Not sure what you mean by not convinced. What are you comparing it to?

I'm comparing them to the Niche Zero, K6, Jx Pro, and they are offering better clarity, good sweetness and decent body to me.

I am comparing them to Lagom P64 with Mazzer 33M burrs, Monolith Flat 2 with SSP HU, Helor Stance Motor, MonCon2 with Italmill burrs and Hedone Honne with SSP flats.

Espressos made with the DLC burrs in my machine seem to lack any sweetness or clarity. There is enough texture but the shots have an astringency that isn't there with any other grinder that I have tried. This became really obvious to me when I changed back to another grinder when using the same beans.

I've had quite a few shots made on a DF64V with standard DLC burrs and a few with HU burrs. The DLC burrs are absolutely mediocre. The espresso was just flat/muddled taste wise, with astringency you wouldn't expect from such a burr. Same beans dialed on the HU burrs were expressed quite better on both those accounts.

If I had a DF64v, I'd replace them with HU or cast burrs imo.

Wondering whether difference in opinions above are due to one user comparing black espresso and the other milk-based drinks? I'm interested to know which would be best between the 64V DLC or SSP HU burrs? Looking to be able to taste the subtle/fruity flavours of medium roast but still strong enough to punch through oat milk.
