I have had significant experience and you're making broad brush statements, then drawing inaccurate inferences. This is not the place to really discuss metal treatments and grinder burr manufacture, but contact me via PM, and I will happily enter into a more detailed discussion, with you on any reference papers you link to. The cvd and pvd coatings you mentioned aren't really for hardness. They are too thin. It's wear resistance and maybe friction reduction.
Lots of tool steels can be machined readily in the annealed condition and, I would have assumed, they are final ground after heat treat.
Your assumptions about tool steel are broad and need to be more specific to the application and specific type of tool steel, in this case burrs? Grinder burrs would normally be machined (cutting surfaces) after the hardening process to ensure they remain dimensionally accurate and flat. Stainless coated burrs present other problems of manufacture.

To those of you using these for pour over, what's your today's impression of this grinder (mainly looking at the 078) and what cons did you find? I did watch all the videos of the influencers and I'm pretty close to deciding on the 078 for pour over, but I don't want to make another mistake as when I bought the Ode gen 2* close to the release date.
*If anyone cares, I'm not sure if it's mine but I find it highly inconsistent, particularly with retention, but I also have to grind way coarser than what I read in the internet (close to 7, being 0 when the burrs chirp)
PS: In Europe there are no distributors selling the Lagom P64 or Zerno or any of the other new ones, and I will not buy imported as I want local (i.e. EU) warranty.

oh, good to know. Then I need to decide if it's 1000 euro more worth it than the 078
