an online vendor for Eureka Atom 75 offers a "dial-in" service, one for 58mm and one for 53mm.
Why would a grinder need to be dialed-in based on the basket size?
thanks

The same dose weight will result in a different puck depth between the two sizes. For the same coffee bean and dose, a 53mm basket would need a different grind to get the same yield and time as the 58mm basket.

Is it a paid "service"?

I believe I know what vendor OP is referring to and yes it's a paid service if you buy just the grinder (free if you buy machine and grinder). I do know someone in my work office that paid for this. Of course, it's not something I would pay for because I love playing with coffee, but there are people that just want good coffee and willing to pay to make things easier.
