My point is consistency and the Italian way is more consistent over a large sample of shops.

I've had exemplary shots that were beaten within an inch of their lives. Another barista's offering, in the same shop, on the same equipment and coffee, performing the same 'show', is pure dreck.

If standing on one leg, reciting the Magna Carta backwards, resulted in consistent, drinkable espresso, I'd be all for it.

Next time I'm on a road trip, I'll take my scale. :wink:
