Seems like an unusual way to align burrs, doing the top/stationary burr first, and essentially aligning it to an un-aligned lower burr.
Using a dial indicator on the lower burr to get that right, then aligning the upper burr to the lower burr might produce different results?
An 807 should have no problem grinding for espresso, but this is not always possible with the way the 807's come straight from the factory, sadly.
