They gave pros and cons of both types and what to look for in a grinder regardless of burr types, Dalla Corte or not: consistency, retention, temperature, ease of use.
Again, they provided a specific technical reason for choosing flat over conical. A simple "yeah but they are biased" is not a good counter argument IMO. Actually, this lack of valid counter argument put more weight to their statement.
