If you send me yours, I will take a crack at it :)

I believe Baratza uses DC motors, so it should be pretty easy to add a motor speed controller.

From seeing it, I'd guess it might be a common sized Chinese gear motor and you might find a slower replacement on eBay if you're willing to live with one slower speed. Otherwise, you're likely having to get rid of all the current controls.

I know I could go back through this monster thread again and possibly find the answer, but on the regular, non-weighing Sette, is it easy to just remove the portafilter forks entirely, for those of us who like to hold the portafilter during grinding? I'd just as soon have the forks out of the way, as to allow the most room to move the pf around a bit to pre-shape the mound. And if so, does it come with a nice cover to cover what looks like will be an ugly hole where the forks used to be?

I can try taking them off this evening, but I don't remember if they are detachable. They are easy enough to swivel completely out of the way if that is your desire though.

How are you going to move it around when it takes only 5 seconds to grind the dose? You are expecting to transfer a routine that you now do in 15 seconds. I don't think you are considering how blazingly fast these grinders reportedly are.

Five seconds is plenty. It's done all the time in shops, with super fast titans.

The Sette makes a nice volcano-shaped mound in the PF. You might not need to move it at all. I don't. Just center the basket, fill and tamp.

While having me rethink my decision of a sette to play with, and finding it disappointing, it sounds like exactly what all the espresso shops in sc need to start using. :)

To detach would mean you'd have no place for the catch bin, which is useful for your 50gram+ grinding session. Also, for the "little guys...Caravel, Peppina, even cremina, CT1, etc, grind in to bin, then dumping into your/our teeny-tiny funnel topped basket is easier than trying to center the PF under the grinder directly...

well, Until they have the new PF/bin fork done. At that point....

As a newbi to HB, I am amazed and grateful to the knowledge which is shared on this site.
Looking to upgrade my grinder, I have been enamored with the HG-1, but am feeling the Sette will probably fit my modest experience level better. Thanks to all of you who share your time and experience; it is appreciated.
