I thought that the step click interval of 8.8microns, or whatever the number is, refers to the vertical displacement of the burrs (in this case conical and not flat) rather than the actual grind size of the coffee. To figure out what the actual size of the grind (which is going to be a statistical average of particle sizes), you'd need to know the geometry of the burr set.
