This was my first Mexican specialty coffee. So far, it is one of the better coffees I have had.

Three V60s brews so far, 16:1 on first two and 18:1 today. 18 to 20 days post roast.

Today's brew, 18:1, had pastry sweetness, replacing a floral sweetness in first two brews. Then a slight candy fruit taste similar to a weaker starburst candy taste replacing an orange dominant, slight tangerine coffee the first two days. After cooling, today's coffee was a creamy fruit punch. All brews have been bright but todays was a bit more mellow brightness.
