Grinder for a small cafe/espresso bar.

Hi hope you're having a good day.
I'm a college student and I'm taking an opportunity to run a small espresso bar that seats around 4-5 people with take away orders hovering around 10 an hour. I'm from the Philippines, so a 3rd world country doesn't have a lot of local options for coffee equipment, but I make do what with what I have.
Currently my candidates alongside my budget would be:
Mazzer Mini Electronic Type A
Mahlkonig x54
Eureka Mignon Specialita
Sanremo 640D Evo
The menu takes on espresso, mainly single origin, the basic lattes, cappucinos, and sweet drinks. But I would really love to showcase the flavors espresso has on its own. Main feature that I'm worried about is the noise level of the grinder as the area in which I'll be serving is sensitive to things getting too noisy.
Some questions I have would be:
1. How can I tell the life cycle of a grinder? Eg. How often to replace the burrs?
2. The effect grinding speed has on the outcome of the grind.
3. Having a doser vs on demand grinder.
