Plumb in setup with an external water tank advice

Hello !

I have an opportunity to upgrade to an espresso machine that must be plumbed in - no internal tank. At first it was a big no-no because the machine would not fit under my cabinet, and the coffee table is 10 feet away from the kitchen water line / sink. But I started to investigate the possibility to run a kind of 'coffee cart' setup, with a Flojet pump and all that stuff.

This is the setup I have in mind :

4) Aqua-tain 4 gallon water jug
5) another jug for collecting the drain water under the coffee table.

So my questions are :

1) Does it makes sense at all ?

2) Am I entering into some kind of really complicated setup regarding maintainance of all sort ?

3) I read that those type of water jugs can leach a plastic taste to the water, and there is some ways to help reduce it (vinegar, baking soda, bleach, alcohol, etc.) Do you think it's a concern that I invest in all that setup + machine and I end up with a plasticky espresso ?

4) I am really open to any comments at that point.

Just a thought but I was able to resolve this same problem by simply removing the cup rail on my machine which allowed it to fit under my upper cabinets. Then it's simple to run a water supply by tapping into the under sink valve.
