Trouble making espresso with specialty coffees - Gaggia Classic Pro

I have a gaggia classic pro and i have installed a pid, 9 bar spring and i have a sette 270 grinder. I have been buying specialty coffee with fruity notes etc but i just cant make as good espresso as the cafe where im buying the beans does.
Should i be able to get similar quality as the cafe or its the lack of pre infusion and the machine in general? Maybe the grinder?
I have tried various brew temperatures,brew ratios,tamping etc etc.
