It is set by the Arduino controller in my setup. The Arduino does the number crunching (so if I lose connectivity my roast progresses). Also - all my controllers are potentiometers connected to the Arduino.

Ahh...I got it. So you control the Arduino independently of Artisan.

Sort of - I can do both with the setup. But moving a potentiometer is a lot easier and friendlier (and lends itself to muscle memory).

Ok, and what do you do with your fan through the roast, if I remember right you have your fan modified as well.
