Thank you all for trying to help me. I did get in touch with Johan finally and he asked if I had the Phidget control panel installed? I had, but it was on when I using the roaster itself with artisan. As I said - I am a rookie so rookie mistake. Somehow I imagined it was like a PC, once I installed the 'drivers' they would be installed didn't realize that on the Mac I had to keep it on at the same time. Thanks again! On to the next rabbit hole.

I'm running Aristan 2.8 on a MacBook Pro. I installed the Phidget drivers, configured settings and that was that. I haven't needed to open the control panel since day one. It works in the background like a PC.
I followed install instruction on the Artisan page when I set up 3 years ago.
Good luck. I'm upgrading from a Kaldi Wide to a Cormorant soon.
